Carrot Cookies!

Like Shanna said, homemade cookies make great holiday gifts and cut down on consumerism and waste in society as well. Instead of the boring chocolate chip or sugar cookie, why don’t you try a healthier and tasty alternative with Carrot Cookies?

 Here’s a simple recipe from The ABC’s of Fruits and Vegetables and Beyond:

 Carrote Cookies

1 cup whole wheat flour

1 teaspoon baking powder

1/4 teaspoon salt

1 cup rolled oats

1/4 cup sunflower seeds

1/4 cup raisins

1/4 cup walnut pieces

1 cup shredded carrots

1/2 cup honey

1/2 cup canola oil

1/4 teaspoon vanilla extract

1) Set the oven to 375 degrees F and let it warm up.

2) Mix the flour, baking powder, salt, oats, sunflower seeds, walnuts, raisins and shredded carrots in a large mxing bowl.

3) In a different bowl, beat together honey, oil, and vanilla.

4) Add the honey mixture to the flour mixture and stir until they are well mixed and the flour is no longer dry.

5) Dampen a paper towel with oil. Use it to wipe a cookie sheet until it is evenly coated with oil.

6) Take a rounded teaspoonful of cookie dough at a time. Place it on the oiled cookie sheet. When you have used all the dough, pat each ball down. Flatten it with your fingers, so the cookie hold together.

7) Place the cookies in the oven. Bake for 10 - 12 minutes or until they are golden brown.

8) Remove cookie sheet from oven and allow cookies to rest for one minute. Using a spatula, carefully move cookies to a wire rack, so they can cool.

Of course, feel free to add and remove ingredients as you see fit. Nut allergy? No problem, just forgo the sunflower seeds and walnuts. You can even toss in some chocolate chips if you like =)
